After enjoying our marinated chicken breasts with provolone served on a organic ciabatta roll, my friend and I popped in "Big Night" (1996). Big night is an excellent movie starring Stanley Tucci, Minnie Driver, and a very young and unassuming Marc Anthony, all of whom find themselves dancing the night away to "Mambo Italiano" thanks to some Italian grappa. Big Night is the comical story of two brothers and their attempt to save a failing restuarant. It is fun flick that is definitely worth checking out.

Marinated Chicken Pizza with Sun Dried Tomatoes
1 boneless, skinless chicken breast
My marinade:
-1/3 cup EVOO
-2 tablespoons red wine vinegar
-2 teaspoons Frank's hot sauce
-1 tablespoon Montreal grill seasoning blend
-1 teaspoon chili powder
Pizza basics:
-1 large Meijer pre-made pizza crust
-1 small can of Contadina tomato sauce with Italian herbs
-1-2 cups of shredded mozzarella cheese
-Oregano and spice to taste
-Pepper flakes (of course!)
Our chicken pizza paired well with Le Bocce, a classic Italian Chianti (a dry red table wine).

South American Flavor in the CU
Out in the garden...
Recent rains and rich soil have helped my market garden "play catch up" this week. This year my garden was planted very late because of repeated heavy rainfalls and cool temperatures this spring. Now everything seems to be growing well and is completely disease free...so far. This is my second year having a garden at the Orchard Downs community gardens located off Race street in Urbana, IL. 'Hercules' pumpkins, 'Early Girl' tomatoes, Vadalia sweet onions, and many other varieties, many of which came from Johnny's Select Seeds.

Welcome!
Welcome to the CU Epicurean dedicated to all things food in Champaign-Urbana, Illinois. I am currently a graduate student studying crop sciences at the University of Illinois. As crop scientists, we are looking for more sustainable methods of producing food that is of the highest quality and safety. In this blog I intend to integrate the production side of agriculture with fine dining. Furthermore, the cities of Champaign and Urbana are a gold mine of restaurants, bars, and other epicurean delights. It is my intention to explore these establishments, and ultimately share them on my blog along with my gardening and cooking experiences. Enjoy!
